The Pea protein isolate (PPI) mainly comes from yellow or green peas and is extracted through soaking, grinding, separation, and drying. During the extraction process, starch, fiber, and anti-nutritional factors (like phytic acid) are removed, while the protein and beneficial components are kept. Depending on the purity, common products on the market are 80% and 85% pure. The 85% pure products are further refined using ultrafiltration and ion exchange chromatography, which improves protein functional properties like solubility and emulsification.
